Amaranta Cocina Mexicana

710 Camino Ramon, Danville, (925) 406-4032, www.danville.amarantarestaurant.com.  This upscale Mexican eatery, whose original location is in Los Angeles, is bringing life to Danville's Rose Garden center.  Tones of fuchsia, orange, and brown, and suspended seashells decorate the airy dining room.  The house margarita, tangy with fresh lime juice, is a good start here, and guacamole, made table-side, should come next.  Entrees go beyond standbys.  We enjoyed the unusual enchiladas de kamaica, the deep purple hibiscus flowers bringing in an astringent yet earthy flavor to the dish.  An order of fish tacos, al pastor adobo-marinated white fish nestled in a corn tortilla with pineapple salsa, was also lively.  Only the churros, which tasted prefried and came with a congealed cream filling, disappointed.  Service was attentive, with the occasional burst of oversharing from a well-meaning waiter.  Lunch Monday-Friday, dinner daily, brunch Saturday-Sunday.
